The easiest way to do this is either by Soul Flaying a creature and stacking its entire HP bar in Wither, then performing a Grievous Strike on it. Alternatively, find an Umbral weapon, and perform either a combo or charged heavy attack to break its stagger meter and Grievous Strike it. You can identify a stagger meter by a small circle in the center of the lock-on targeting system.
